Corrective Action(s): Clean upper ceiling of ice machine and also the back edge of the upper prep coolers (behind the inserts). Add this to your written routine cleaning schedule.

Comments

Routine check:
Ice well in bar area has been repaired and is no longer leaking. Chlorine bleach sanitizer is used to sanitize the ice well (use 1 tsp domestic bleach in 1 litre water).
Coolers - all are 4 C or colder.
No hot holding of food during inspection.
Produce is washed (eg romaine lettuce) unless pre-washed shown on label.
Quats sanitizer - 200 ppm - use this on cutting boards and cleaned surfaces every 2 - 4 hours as per directions on label. Air dry.
Dishwasher - 50ppm chlorine sanitizer final rinse - good. Hot water - good.
Future: plan to re-surface the floor of the walk in cooler in future as it is becoming worn and difficult to clean.
