Observation (CORRECTED DURING INSPECTION): Staff observed to use the top of the organics bin as a table top for preparing a rice dish. CORRECTED DURING INSPECTION - rice transferred to new container and the old container was put into the wash pile.

Corrective Action(s): Violation explained to management and all staff. The refuse/garbage/organics bins are NEVER to be used for food preparation. These areas are very dirty and the bottom of the container once placed from top of these bins onto a surface (counter top, cooler shelf) will contaminate that surface via cross contamination.
Ensure this item is discussed with all staff.
