Follow up inspection conducted to routine inspection (report #TCHN-CHMTGE)

Findings:
- Front display cooler was recorded at an ambient temperature of 2.8C.
- Smaller prep cooler (near handwash sink) was maintained at 4.9C. Operator aware not to store any cold potentially hazardous food in the cooler until the temperature is maintained at or below 4C.
- 50ppm chlorine residual recorded during rinse cycle of low temp mechanical dishwasher.
- Operator aware not to use garbage bags for covering food. He stated that he has started using saran wrap instead.
- All food containers stored in the walk in cooler were properly covered.
- Frozen chicken was being thawed in the prep sink under cold water. The temperature of frozen chicken was recorded at -4C. Proper thawing of frozen food was discussed and operator was advised to use cold 'running' water for thawing.
