Operator discussed switching to QUATS based sanitizer. Follow manufacturer's instructions for mixing; ensure that solution is maintained at 200 ppm QUATS

Remove droppings and sanitize areas using a mild bleach solution (100ppm chlorine made by mixing 1 tsp bleach with 1 liter water)

=Glass door cooler measured 3 degrees C and 2 Off site upright freezers (-18C and -18C ) measured < -18 degrees C
=High temperature dishwasher had a final rinse temperature of 83.2 C at the dish surface (minimum 71 C required for proper sanitizing)
=General food storage practices satisfactory at the time of inspection. Foods properly stored off the floor and covered and raw meats stored below ready-to-eat foods.
