This is a repeat violation.
Corrective Action(s): Ready to eat foods (foods that will not be cooked) such as lettuce and other produce must be stored above raw meats to protect them from contamination from meat juices. Store food only in food-grade containers. Re-wash lettuce and store properly.
Correct immediately.

Observation: Pest droppings observed behind equipment.
Corrective Action(s): Remove pest droppings. Clean and sanitize all areas where pest droppings are observed. Maintain facility in sanitary condition to prevent harborage of pests. Have pest records available for next follow up inspection.

Observation: As per staff, at the end of the day, the leftover lamb cone is removed from the heat and wrapped in plastic wrap and re-frozen.
Correction: Partially cooked cones must not be kept intact for future use. Refer to "Guidelines for the Safe Preparation and Serving of Donairs, Shawarmas and Similar Products" Guideline for the proper handling of leftover cones. Update Food Safety Plan and train staff immediately.
Discussed with staff on site the proper handling of leftover meat and left them a copy of Guidelines.

Follow up inspection to report PKUR-C5AU7E.

-Discussed food handling procedures (leftover cones). Operator was able to describe how leftover food is handled in a safe manner - good. Code 202 corrected.
-Operator to update Food Safety Plan so it is compliance with "Guidelines for the Safe Preparation and Serving of Donairs, Shawarmas and Similar Products" and train staff.

-Discussed temperature records for hot holding units and dishwasher. Ensure they are recorded and available for review.
-Dishwasher registered at greater than 71 C on the plate surface - good.
-Two-compartment sink dishwashing poster provided - please follow these instructions.
-Discussed when manual dishwashing can occur vs when the mechanical dishwasher must be used. Ensure staff are trained on this.
