Food not cooled in an acceptable manner [s. 12(a)]
Observation: Noted tray of various types of tempura at room temperature at 20C - unable to determine length of time tempura had been out at room temperature. Product discarded.
Correction: Ensure foods are cooled from 60C to 20C within 2 hours at room temperature then immediately transferred to cooler unit to cool from 20C to 4C within 4 hours.

Observation: Discarded 2 containers of tempura at 17C to 18C, container of tofu 18C and 6 raw shrimp in a container of flower 20C - stored at room temperature
Correction: Keep all cold potentially hazardous foods stored at 4C or less at all times.

Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Noted bowls and containers stored on the low counter over grease trap with hot water tank. This issue was noted on the previous report. Wash and sanitize all this equipment and store in clean and sanitary area.
Correction: Do not store food equipment in this area.

** If future inspection identify issues with room temperature storing of foods or utilizing hot water tank area as food storage/food equipment storage, the premises will be issued a correction order and operating restrictions (ie. restricted menu/processing). The premises does not have a walk in cooler and has limited food counter space in the back kitchen.
