Observation (CORRECTED DURING INSPECTION): Bags of coffee beans, coffee cups, stirring spoons were placed right next to hand washing sink.
Corrective Action(s): Do not store food products or equipment right next to hand washing sink without a splash guard. Ensure all hand sinks are free of obstruction. Store food and equipment in designated areas to prevent contamination.

Observation: A box of raw eggs are stored on the top shelf of walk in cooler with all the dairy. Raw eggs are raw protein and should be stored on bottom shelves away from ready to eat foods.
Corrective Action(s): Move raw eggs to bottom shelve or separate shelve away from ready to eat foods. Correction required today.

Observation: Fume hood maintenance and cleaning was due by February 2019 as indicated by service sticker. This is overdue by 5 months.
Corrective Action(s): Ensure this unit is serviced as required by licensed technician. Correction required this week.

Premise is sanitary. No signs of pests at the time of inspection.
Hot and cold running water available.
Hand sinks are available with paper towels, liquid soap and warm water.
Dishwasher final rinse cycle was 75.5C at the plate as per min/max thermometer.
Prep sinks are in good working order.
One lower mob sink in use for janitorial tasks only.
300 ppm quats sanitizer in use. Test strips available and in use.
Food is protected from contamination.
3 compartment warmer unit is used with ice to maintain prepped food below 4C (eggs).
No hot holding at the time of inspection. Soup being cooked above 71C tomato tomato sauce.
Prepped food products are dated and used with one day of service.
Temperature monitoring and logs in place.
Walk in cooler at 3.8C cheese.
Cooking units are sanitary and in good working order
Food service is take out only.
2 door freezer -12C muffins, stand up locked freezer -10C bread and salami.
One new, self contained, toaster pizza oven in use. Satisfactory.
