Observation (CORRECTED DURING INSPECTION): Flat of eggs stored at room temperature (77F/25C). Time of the inspection was about 2:30pm and the restaurant was not busy.
Corrective Action(s): Store in the cooler.

Observation (CORRECTED DURING INSPECTION): Knives for cutting ready to eat foods such as cooked items and lettuce wraps were stored in the dirty cracks between equipments.
Corrective Action(s): Do not store knives in gaps between wall and counter and between equipment.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): No paper towel in staff washroom. Cold water faucets handle in the bathroom caked with flour.
Corrective Action(s): Clean the bathroom including the sink. Ensure there is paper towel available. Do not exit the bathroom until hands are cleaned.

Observation: The kitchen and the storage area are dirty. Floor tiles in the kitchen and inside the walkin fridge have worn through and lifted in several places. Old droppings noted behind the bar.
Corrective Action(s): 1) Thoroughly clean all surfaces, floor under cooking equipment, flour/ingredient bins, floor in the storage room, floor behind the chest freezer to remove accumulated food debris and grease. Thoroughly clean all walls and vertical surfaces including the portion under and behind equipment, the wall behind the kitchen phone. Clean the phone and cord to remove grime. Remove droppings.
2) Replace old damaged tiles with new ones.
