Observation (CORRECTED DURING INSPECTION): A) Hand sink at far end of bar did not have soap and paper towel.
B) Place paper towel roll at entrance of bar and the hand sink at the cookline was not in a holder/dispenser. This issue was noted on the previous inspection.
C) Hand sink on cookline is installed very far back. No issues noted at time of inspection.
Corrective Action(s): A) Place soap and paper towel at the hand sink at the far end of the bar. Ensure paper towel is in a holder/dispenser.
B) Place paper towel for hand sink at entrance of the bar and at the cookline in a holder/dispenser.
C) Manager to watch staff and ensure staff are able to properly access and wash hands at this handsink. Installations of splashguards might be helpful.

Observation: A) Washroom door opening into food preparation area was open at time of inspection despite the 'keep door closed' signage posted.
B) Scoop for ice machine was stored in the ice
Corrective Action(s): A) Install self closing device/hinge on the staff washroom. This issue was noted on the previous inspection report.
B) Keep the scoop for the ice stored outside of the ice in a separate container.

All coolers 4C or less (walk in, prep, undercounter...etc)
Freezers - 18C to -21C
Hot holding of soups and gravy higher than 60C
General sanitation satisfactory. No obvious sign of pest activity noted at time of inspection.
Meat slicer was being cleaned at time of inspection. Kitchen staff they take it a part and wash/sanitize it after each use.
Chorine sanitizer in container for the food preparation area 100ppm. Reminded staff to keep all wiping cloths stored in sanitizer when not in use to prevent microbial growth.
Quat santizer at bar in spray bottle 200ppm.
High temperature dish washer achieved 71C (with thermolabel).
Glass washer at bar had 12.5ppm iodine.
3 Fetal alcohol signs provided. Post one in each public washroom.
Discussed staff hygiene at time of inspection. Ensure staff do not come to work while sick and that they properly wash hands before handling food - not just the kitchen staff, servers included.
