Routine inspection conducted of Cobs Bakery. Premise is generally well maintained and operated. The following was noted at time of inspection:

1. Temperatures
- Stand-up coolers at 4C or less
- Stand-up freezers maintained at -18C or less
- Coolers and freezers equipped with accurate thermometers
- Temperature logs were available for review upon request, and were up-to-date at time of inspection

2. Hygiene and Sanitizing
- Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in the food preparation area and in the rsetroom
- Spray sanitizer and QUATS sanitizer present and dispenses approximately 200 ppm QUATS at time of inspection. NOTE: Sanitizer logs were not taken in the last 3 days. Employee states that the store no longer had any QUATS test strips and that they will be ordered
- 3-compartment sink well maintained and equipped with drain plugs
- Drain board present, cleaned and sanitized items above the 3-compartment sink maintained in good sanitary condition
- Fan / vent area above the oven is maintained in good sanitary condition
- *Dough mixer was recently used this morning - ensure that this is cleaned and sanitized before next use today*

3. Storage
- Food-grade bins used to store all flour products once opened
- Chemicals stored separately from all food products. Mop sink well maintained
- Toppings and ingredients are stored inside plastic containers with lids inside the coolers
- Food products elevated at least 6" off the floor. Large bags of flour on wheel-mounted platform

4. Administrative
- Permit posted and up-to-date
- Employee states that she has taken FoodSafe 1 - details of employee will be provided to EHO for verification afterwards. Ensure that you keep your FoodSafe 1 certificate on-site for verification
