Routine inspection conducted today:
Handwash stations, including staff washroom, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
Food stored protected, proper hierarchy and off the floor.
Sink & Surface Cleaner Sanitizer used in sanitizer container - proper concentration detected.
Low temperature dish machine noted with 100 PPM chlorine residual.
Bar low temperature dish machine noted with 12.5 PPM iodine residual.
Food contact items, especially interior of the ice machine, cutting boards and soda gun dispensers, were noted sanitary and in good condition.
Proper dispensers available for bulk food containers and ice bin - all stored in a manner where the handles extend from the food.
Besides a couple of flies noted in the dishwashing area, no other pest activities were noted during the inspection. As per Manager, an external pest control company comes in monthly for traps and inspection. Continue to work with the pest control company to mitigate and eliminate fly issue.
Mop bucket sink and bucket noted sanitary.
Chef has a valid FOODSAFE level 1 certificate - expiry Feb 2027.
Overall sanitation and organization excellent.
