Comments

-Upright cooler was at 4C.
-Student area upright coolers were both at 4C.
-Chest freezers (3 units) ranged from -16C to -19C.
-Hot holding was greater than 60C. Foods are cooked to greater than 74C prior to hot holding. Thermometer used to verify cooking temperatures. Foods are stored in the hot holding area for less than 2 hours.
-Temperatures are checked and recorded daily.
-Cleaning and sanitizing carried out in the 3-compartment sink. Bleach was tested at 200ppm. Test strips available on-site to verify chlorine concentration.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Staff observed practicing good hand hygiene practices at the time of inspection.
-Quats sanitizer pail was labelled and tested at 200ppm to 400ppm.
-Equipment was found to be clean and sanitary.
-General food storage practices good at the time of inspection. Foods along the order line wrapped up and protected from potential contamination. Foods stored off the ground and covered. Foods stored in pest resistant container at the end of the night.
-General sanitation satisfactory at the time of inspection.
-Kitchen is serviced by professional pest control operator. Minor pest issues noted after the winter break. Staff monitor and clean and sanitize affected areas on a daily basis. Continue to monitor for pest activity and inform pest control services as required.
-FOODSAFE Level 1 valid until August 15, 2027.
