Observation (CORRECTED DURING INSPECTION): Rice mixture at 49.9C surface temperature and 53C internal temperature.
Rice mixture in food safety plan chart says to be held for 3hrs, >60C.
All other items and tray next to it (mixed pulled chicken) is >60C.
Corrective Action(s): Operator directed staff to reheat in microwave above 74C and place back in warmer.
Operator to arrange tray to be in an alternate area in warmer so it can reach 60C hot holding.
Please ensure this mixture and warmer can reach 60C or hotter.

Hand wash stations supplied with liquid soap and paper towels in dispensers.
Operator replaced paper towel in front hand wash station as it was empty during the inspection, thank you.
Hot holding units >60C.
Coolers <4C.
Freezer <-18C.
Dry storage area appears clean and organized, some spilled sugar and other items to clean up.
Prep stations appear clean.
Dishwasher >71C.
Sanitizer 200ppm Quats. One sanitizer bucket was empty, another (egg station) had 0ppm but these were not in use or refilled at the time of inspection, thank you.
Operator appeared to be knowledgeable and understood corrective actions to be made, great job.
No signs of pests at the time of inspection.
