Routine health inspection. Coolers at 4 degrees C or less. Freezer at -18 degrees C or less. No hot holding. Food is protected from potential contamination. Raw and ready-to-eat items properly organized, food covered and stored off the ground. Thermometers in place for all coolers with one exception--ensure a thermometer is available for glass door cooler in kitchen. Hot and cold running water, liquid soap, and paper towels are in place for hand washing. Bleach water sanitizer available at 100 ppm chlorine in bucket. Wiping cloths stored in sanitizer. High temperature dishwashers (two) measured 79 and 80 degrees C at the utensil surface. Required: 71 degrees C or more at the utensil surface. Equipment and utensils maintained in sanitary condition. General sanitation excellent. No signs of pest activity observed during inspection.
