Observation: Sushi bar cooling unit measured 8.5 C with probe thermometer and measured up to 10 C with IR gun.
Corrective Action(s): Immediately have unit serviced by technician. Implement food rotation practices in this unit such that all food is replaced within two hours and/or discarded as per food safety plan. Smaller volumes of food must maintained in this unit.
**Make sure when thawing food not to leave the food in a location that cannot be monitored/observed. If allowing food to thaw, best practice should be in cooling unit, not at room temperature (crab meat), and times should be monitored.
**Check at follow up inspection date noted.

Observation: Significant mouse infestation observed. Dropping on ground in multiple areas of kitchen. Most concentrated in back area of kitchen including: Along dry food storage shelves; at hot water tank and mop sink area; Front sushi bar area;
*Droppings and activity likey in other hard to reach areas including behind equipment, under equipment, in corners and near access points like plumbing and electrical conduits. Sticky traps placed by operator and two mice noted stuck.
Corrective Action(s): Immediately contact Pest Control Operator (PCO) and enter into contract for services. Seek advice and recommendations. Implement recommendations by PCO, utilizing integrated pest management practices.
Follow up inspection to review contract and recommendations as noted on report.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Back area of premises, bar area of premises and cookline area of premises not cleaned on regular basis in a manner to prevent build up of food debris, greases and mouse activity (droppings). Hard to reach areas behind and under equipment is not being included in regular cleaning activities. Sanitation plan is not being implemented or followed. Operator is not verifying work is being completed.
Corrective Action(s): The entire premises requires a thorough clean up and this clean up will be audited on follow up inspection noted in report. Equipment will be moved to audit the quality of the cleaning done by staff.
