Hand-washing stations must be equipped with a stocked liquid soap dispenser, warm water and single use hand drying towels from a dispenser.

Discard sushi rice not used during a meal period. Sushi rice is to be prepared fresh daily.

Repair or discard damaged knife - blade and handle must be easily cleanable.

Provide new Iodine test papers to verify glasswasher function.
