Comments

- All coolers, except for the one in the back area, are equipped with working thermometers.
- Container was placed on top of the ice machine to store the ice scoop.
- The operator noted that the eggs are purchased from approved source.
- The level of QUAT concentration in the sanitizer bottle was still >200ppm, but little less than the last time. **Ensure to obtain sanitizer that is approved for use in Food Service Establishment.
- Elastic bands and any other items that may accidentally contaminate foods have been removed.
- Discussed options for taking FoodSafe level 1 course. You may take the course in-person or on-line. Options for taking the course on-line can be found on FoodSafe website.

ATTENTION:
- Obtain a thermometer for the cooler in the back.
- Replace cutting boards that show signs of wear and are blackened.
- Ensure to remove the foam in the 3rd compartment of the dishwashing sink.
- Ensure to label all sanitizer bottles to prevent mis-use and potential chemical contamination of foods.
- The operator shall provide a copy of valid FoodSafe level 1 certificate by March 31, 2019.
