- High Temperature Sanitizing Pan Washer: 77 deg C (thermolabel)
- QA advised that unit was serviced, checked, and started running again once pan surface temperature was verified using a thermolabel.
- Pans were manually washed and sanitized when Pan Washer was not in service. QA HOLD signage was placed on unit while unit was not in operation. Procedures were verified by QA.
- Operator has themolabels - unit temperatures are currently checked approximately 1x/ week. Due to the high volume use of Pan Washer, unit temperatures should be verified daily before use. Records should be maintained.

- Violations from Inspection Report DNGG-AQ8U2S (dated August 14, 2017) were discussed with QA. Ensure that violations are corrected by noted correction dates.
