Observation: At the time of inspection operated stated the high temperature dishwasher is not in good working order. Dishwasher unable to reach minimum temperature of 71 degrees C at the plate surface during the final rinse cycle. No drain plugs available for the drains at the 3 compartment sink.
Corrective Action(s): At this time premise continues to operate as a take out/delivery business only. Operator to immediately obtain 3 drain plugs for the 3 compartment sink for manual warewashing. All dishes, utensils, equipment to be washed, rinse, then sanitized in 100ppm bleach for 2 minutes then air dryed. Followup inspection January 17, 2023.
