Routine Inspection:
- Hand washing stations (front and back) fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Coolers (walk-in, sandwich prep and undercounter) maintained at or below 4 degrees Celsius (40 degrees Fahrenheit).
Walk-in freezer temperature satisfactory.
Hot holding (soup and meatballs) maintained above 60 degrees Celsius (140 degrees Fahrenheit).
- Temperature logs maintained.
- 3-compartment sink available for manual warewashing.
- Concentration for QUAT sanitizer at dispenser = >200 ppm.
- Concentration for QUAT sanitizer in bucket and spray bottle = 200 ppm. Reminder to keep wiping cloths in the sanitizer solution.
- No signs of pest activity at the time of inspection.
- General food storage practices very good at the time of inspection:
All food items stored at least 6 inches (15 cm) off the floor.
All food items covered and protected from contamination.
- General cleanliness and maintenance good at the time of inspection.
