Observation (CORRECTED DURING INSPECTION): REPEAT VIOLATION: Wiping cloths are found lying on the countertops.
Corrective Action(s): Ensure all wiping cloths are fully submerged inside a bucket containing 100-200 ppm bleach solution. Bleach solution can be prepard by using 1 tsp bleach to 1 L water. Operator prepared a bucket containing bleach solution to submerge wiping cloths

Observation (CORRECTED DURING INSPECTION): Raw meat was stored beside sauces inside the cooler. Raw meat juice may contaminate the sauces.
Corrective Action(s): Ensure all raw meats are stored above ready to eat foods (e.g vegetables) and sauces to reduce the likelihood of contamination.

Observation: Sliding door cooler was not in use during last routine inspection. No potentially hazardous foods were stored inside this cooler during last routine and today's follow-up inspections.
Corrective Action(s): Ensure the sliding door cooler is repaired to maintain 4C and below.

Follow-up inspection conducted for report JTUG-CG8UK4:
- Operator said a technician will arrive today at 5 pm to repair the dishwasher
- Both standup fridges are at 2.8C and 3.8C, respectively. Temperature dials are at coldest setting.
- Once the dishwasher is repaired, ensure that the dishwasher is dispensing 50-100 ppm chlorine at the plate level. Until the dishwasher is repaired, continue to sanitize all dishes inside a sink that is filled with 100-200 ppm bleach. Use single-service utensils (takeout containers)

- Operator said that several items (e.g. broken prep cooler) will be removed today.
- Continue to CLEAN the facility, especially hard to reach areas by the cookline. Remove any empty jars, containers from the facility to avoid attracting pests.
- Use temperature logs to monitor the fridges/freezers daily. Operator has copy of temperature logs template available.

- If the dishwasher is NOT repaired by the next follow-up inspection, a CLOSURE ORDER may be issued.
