No cooling hazardous product found on roll racks near walk in freezer - remember to cool them rapidly by rolling them into your (functional) walk in cooler
All products (except for a few trays on roll racks) found with food grade lid. As discussed, remember to always have raw meats on the lower racks.
Also cover your large containers of gulab jamun
Cardboard boxes not found in use - good
Most milk crates found only with containers of milk product in them - except one with partially cut onions and whole bell peppers. Use a food grade container for these items
Pest control company has been on site, traps reset, and bait placed outside. Staff have done a thorough clean of back rooms. See below under "outstanding"
Repaired equipment:
- dishwasher reached 50ppm chlorine sanitizer residual. Staff in charge of record sheets was shown how to test, and stated daily tests will be done for both machines
- walk in freezer reached -14C at time of inspection. If this machine continues to cause problems, replace the condenser.
- walk in cooler read 2-3C this morning according to the temperature logs, measured 3-4C at condenser level, but 5-7C at product level.
General sanitation greatly improved since Wednesday. Keep it this way!

Outstanding:
New Food Safety Plans required for your catering business. To be discussed Tuesday.
Wall repair required due to water damage from walk in freezer malfunction. Do this BEFORE mould becomes a problem.
Holes must be sealed in the walls to stop pest entry & movement.
Walk in cooler condenser is reaching correct temperature, however it does not have the power/ circulation to keep the food products at 4C or below.
Discuss the above items with me on Tuesday. These all must be addressed.
