2. Clean & sanitize the inside of all coolers, including the condenser unit in the walk-in cooler.

Observation: 1. Observed a live mouse caught in a glue trap at the time of inspection.
2. Observed flies in a bin of water where rice scoops were stored.
3. Fly traps set up right above food prep tables.
4. The latest pest control inspection report indicated medium rodent activity within the kitchen.
Corrective Action(s): Correction order was issued. Refer to the order for corrective action.

Comments

Correction was ordered for pest activity & unsanitary condition of the kitchen.
As per the order, the following correction order must be followed:
1. Increase the frequency of professional pest control service visit (from monthly to biweekly) until fly and rodent infestation is diminished
2. Replace the backdoor so that it is tight fitting at all times
3. Clean the inside of all coolers where there is build up of ice and/or food splash
4. Ensure to make fresh sanitizer daily as chlorine dissipates over time
5. Remove equipment that is not used in the kitchen to declutter

General:
- Handsinks are stocked
- Temperatures of refrigeration units are adequate (<4C coolers, <-18C freezers)
- High temp dishwasher reached >71C at plates' surface
- Sanitizer spray bottles lacked chlorine. The operator re-made the sanitizer at the time of inspection.
- Deep cleaning is required throughout the kitchen
