Observation (CORRECTED DURING INSPECTION): There were a cutting board, knives, and other utensils stored inside the handwashing sink at the time of the inspection. This is a repeat violation.
Corrective Action(s): The operator removed the items. Keep the handwashing station free of any equipment or utensils. It must be accessible to all staff at all times to properly wash hands. Failure to comply with this requirement will lead to stricter enforcement and/or violation tickets.

Comments

- General sanitation is satisfactory.
- All handwashing stations stocked with hot/cold running water, soap, and paper towels. Ensure to provide wastebin near the handwashing station.
- All coolers (display, walk in, prep) at < or = to 4C.
- Chest freezer at -18C.
- All refrigeration units are equipped with working thermometers.
- Hot holding unit is not in use. The operator stated that they no longer use the unit. Remove the hotholding unit from the premises.
- Daily temperature logs were kept up to date.
- Three compartment sink available for manual dishwashing. Sanitizer available at 200ppm Quat solution with drain plug to fill the sanitizing compartment of the sink. Please follow the proper manual dishwashing procedures.
- Surface sanitizer available in labeled spray bottles at 200ppm Quat solution and 100ppm chlorine solution. Ensure to provide surface sanitizer at each station (ie serving area, main prep area).
- Dry storage area needs better organization. Adequate wire racks available.
- No signs of pest activity at the time of the inspection.
- Latex free gloves being used.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.
