Observation: A few rodent droppings observed on floor by the back entrance of the prep room. No droppings observed in kitchen. Professional pest control contracted. Recent report checked. Spices/dry goods stored in pest proof containers.
Corrective Action(s): Ensure to have droppings removed every morning and sanitize all affected areas.

Observation: A few rodent droppings observed on floor of the back prep room. Sanitation of other areas satisfactory.

Comments

Routine inspection conducted:

- Handwashing stations adequately supplied throughout.
- Coolers operating at/below 4'C; Freezers operating at -18'C.
- Hot-holding units operating above 60'C.
- 200ppm Quats available in labelled spray bottles.
NOTE: Ensure to have each bottle (detergents/degreaser/sanitizer) accurately labelled.
- Good food storage practice observed throughout.
- Low temperature dishwasher achieved 50ppm chlorine at plate level after final rinse.
- Glasswasher achieved minimum level of iodine (12.5ppm) after final rinse.

General maintenance and sanitation level had improved from the previous inspection, except mentioned above.
