- All coolers are measured at less than 4C
- Freezers unit are less than -18C
- High temperature dishwasher is measured at 77C during final rinse cycle at dish level
- Food Storage practices are satisfactory
- Sanitizer solution available in at 200ppm chlorine residual
- Hot buffet line is measured at greater than 60C. Cold holding items in buffet line measured at 6-7C. NOTE: All cold foods are for maximum 4 hours only, fresh foods are refilled after 4 hours. Small batches only
