Follow up to report # MBEK-CQ5V3H.
Low temperature kitchen dishwasher has been serviced. Dishwasher measured 43 degrees C and 50 to 100 ppm chlorine in the rinse residual at the utensil surface.
Quats sanitizer available in labeled spray bottles at 200 ppm.
Note: Test strips (chlorine, quats) are now available on site. Dishwasher and sanitizer log template provided to restaurant manager at time of inspection.
Upright cooler noted on previous health inspection report will be used only for non-potentially hazardous food storage only (e.g. bread), as stated by restaurant manager. Adequate storage space on site at time of inspection. It was discussed that cooler must be capable of maintaining food at 4 degrees C or less if used for potentially hazardous food storage. Thermometer available in cooler appears to be accurate. Manager to contact Environmental Health Officer if cooler is serviced or replaced.
Chest freezer at -24 degrees C.
