Observation (CORRECTED DURING INSPECTION):
REPEAT VIOLATION:
- Pineapple bun topping dough and mexican bun topping dough (all raw) observed at room temperature. There was no baking or prep in process. No staff is able to indicate the ingredients. No lab analysis report has been received regarding water activity and/or pH of the above mentioned food items since the last consultation inspection.
- Rice cake and glutinous balls observed in room temperature.
- Time tracking of the PHF baked items not being done thoroughly. Chicken pie was stored on ambient display for more than 2 hours as per the staff.
Corrective Action(s):
- Above items will be deemed as potentially hazardous food items until an official lab testing is done to prove otherwise. Store them at 4C or below. Contact the inspector regarding the lab analysis before proceeding if testing is decided to be done. Products discarded.
- Ensure to time track savoury buns/ potentially hazardous food items every 2 hours as they should be discarded every 2 hours.
