-reviewed labels of ready to eat keep refrigerated products - ensure formatting for all labels allows all information to be displayed
-sausages, jerky, and ham procedure binder on site for food safety plan
-nitrite calculations done for each product and kept on site
-sanitation procedures previously submitted and reviewed
-ceiling of brine cooler has been re-painted
-will be changing the flow of the production floor
-dog food made in separate room
-quats sanitizer at 200ppm
-each smoke house has temperature log for each product batch that is done, paper copies kept on site
-cooler and freezer temperature alerts are provided electronically
