Hand wash stations were fully equipped with soap, paper towel, hot and cold running water.
All coolers 4C or less (walk in, prep...etc)
Freezer -18C
No hot holding available. Pizzas maintained at approx 35C in enclosed display unit. 2 hour time tracking posted for each pizza as per corporate food safety plans.
Probe thermometer available on site to check internal temperature of foods. Ensure probe is sanitized between uses.
Good general sanitation.
No obvious sign of pest activity noted at time of inspection. Back door was closed at time of inspection.
Chlorine sanitizer in spray bottle 100ppm. Reminded staff to use single use paper towel to wipe otherwise, reusable cloths to be stored in sanitizer solution to prevent microbial growth.
Manual ware washing procedures reviewed at time of inspection – no concerns. Drain plugs available. Chlorine test strips available to verify sanitizer concentration.
Pans sent for warewashing to commissary at head office location once every 6 months.
Wooden boards lined with single use wax papers and manually washed/sanitized after each service.
All stored foods appeared protected (ie. stored off the ground, covered light covers in place..etc)
