305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation:
1) Found few mice droppings in the walk-in-cooler and found holes in the exterior corners of the walk-in-cooler. These holes are entry points for mice to enter the premises.

2) Extra and/or unused items (dishware, equipment, cookware) being stored in the premises. These items are rarely moved or cleaned. This will encourage pests to live in and/or around these items.
Corrective Action(s):
1) Immediately clean up the droppings, wash and sanitize surfaces that came into contact with the droppings. Block holes with steel sheets, wire mesh (1/4" or smaller), or tightly stuff with steel wool and then seal with expanding foam.

2) Remove extra and/or unused items from the premises. Or, purchase and store extra and/or unused items in large plastic bins with tight fitting lids.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
1) Plastic protective sticker, covering the stainless steel side of the dishwasher. The plastic is not cleanable and it's purpose is the protect the steel from scratches during transit.

2) Water dripping under the display drink cooler. This water will attract mice and cockroaches and provide a water source to drink.
Corrective Action(s):
1) Immediately peel off the plastic protective sticker to expose the stainless steel side, that is durable and cleanable.

2) Determine the reason/source of the dripping water and fix it, so it no longer drips.

Comments

A routine inspection was completed:
- Kitchen assembly coolers 4C or colder; walk-in-cooler 3C; upright freezers -16 or colder; hot holding units above 60C; and thermometers present.
- High temperature dishwasher had a rinse cycle temperature of 75.7C at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottles had [Cl2] above 200ppm.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate or below RTE foods; and foods stored 6" off the floor on shelves.
- No expired foods in use. FIFO rules being followed.
- Shellfish tags kept for 90 days and then discarded.
- General sanitation level is good. Keep up the good work.
- Exhaust canopy and filters have minimal accumulation of grease. They were professionally cleaned in February 2024 and are required to be cleaned and serviced this month, as per sticker. Schedule this cleaning and service to be completed ASAP, as it is a fire hazard and will attract pests.
- All surfaces are in good working order.
- Valid FoodSafe certified staff present, or possess an equivalent certificate. Owner's (who was present) certificate expires in 2027 (posted).
- A professional pest company treated the premises for ants and cockroaches about 4 months ago. No live cockroaches or ants observed during the inspection. Traps present, but none caught on them.
- Prep sink waste pipe no longer leaking.
- Valid health permit and decal posted.

ACTION
Store all wiping cloth in a bucket of bleach sanitizer (1 Tbsp of bleach to 4L of water) when not in use. Change the bleach sanitizer solution every 2-3 hours with fresh solution.
Peel off the plastic protective cover on the exterior surfaces of the dishwasher to expose the stainless steel walls.
Water dripping and pooling on the floor, under the upright display drink cooler. Find the source of the dripping water and repair the problem, to stop the dripping and eliminate a water source for mice and cockroaches.
Block all holes in walls by installing metal sheets to the openings, or installing wire mesh (1/4" or smaller), or tightly stuffing holes with steel wool and then sealing with expanding foam.
Have the exhaust canopy and filters professionally cleaned and serviced ASAP.
Do not keep cardboard in the premises as cockroaches like to live in the corrugated cardboard.
Store extra and/or unused items in large plastic bins with tight fitting lids to eliminate harboring areas for pests, OR discard/remove any extra or unused items from the premises.
