Observation (CORRECTED DURING INSPECTION): 4 prepackaged containers of Quiznos nanaimo bars (label stated milk & egg as ingredients) were stored in reach-in cooler operating at an ambient temperature of 8C. Operator confirmed that the nanaimo bars are not shelf stable and require refrigeration. As per the operator, the containers were stocked in front reachin cooler after store opening (at 9:30AM) for lunch rush hour and were stored at room temperature for less than 2 hours. After verification, all 4 containers were moved into prep cooler (~11:30AM).
Corrective Action(s): - Ensure that all cold potentially hazardous food is stored at a temperature of at least 4C or less to prevent food contamination due to bacterial growth. If you would like to store nanaimo bars at room temperature during rush hours, keep a record/log to ensure that it does not exceed 2 hours time period at room temperature. After 2 hours, store the unsold containers back in cooler at a temperature of 4C or less.
- It is recommended to only store small batches (few containers) of nanaimo bars at room temperature during rush hours that can be sold out within 2 hours.

Observation: 1. Handwash sink in the front service area was missing cold water faucet handle (knob).
2. Reach-in cooler noted at an ambient temperature of 8C. Internal temperature of pop drink recorded at 8.3C. Operator stated that the cooler is primarily used for storing drinks but 4 boxes of nanaimo bars also observed in the cooler.
Corrective Action(s): 1. Ensure that the handwash sink is maintained in good working order. Repair the sink to ensure that staff has access to both hot and cold water.
TO BE CORRECTED BY - June 30, 2022
2. Service the reach-in cooler to ensure that it is able to maintain an ambient temperature of at least 4C or less. Do not store any cold potentially hazardous food in the cooler until it has been repaired.
* Please note that the reach-in cooler temperature fluctuates frequently and similar issue was noted by the previous district EHO.

Routine inspection conducted.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Temperature of walk in cooler at 3C
- Walk in freezer at -11C
- Front prep coolers at 2C and 3C
- Hot holding units (soups) above 60C

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- General sanitation of the facility is satisfactory.
- Hand wash station had supply of hot running water, liquid soap, and single-use paper towels.
- Sanitizer pail available and the concentration of QUATS noted at 200ppm.
- Sanitizer dispenser releases 200 ppm QUATS at 3-compartment sink.
- Cheese slicer maintained in good sanitary condition.
- Self serve pop machine was found clean.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Operator has valid FoodSafe Level 1 certificate.
