- Inspection conducted to follow up on outstanding requirements from the last routine inspection:
- No cooling foods available at time of inspection. Discussed proper cooling procedures with the chef. Chef confirmed that cooling procedures noted during last inspection were not acceptable and regular practice.
- All hot held foods were stored on the hot table under the heating lamps at 60C or higher
- All foods were protected at time of inspection (ie lids over croissants and pastries...etc)
- No pizzas at room temperature at time of inspection. Discussed 'display only' sign with Chef. Chef confirmed pizzas are made per order and the ones out at room temperature are display only. Staff to ensure 'display only' sign is available otherwise the product will be treated as a potentially hazardous food that is not stored at safe temperatures during future inspections.
