Produce:
Walk-in cooler was to 6-7 deg C.
Display coolers were at 4 deg C.
Trimming area - liquid soap and paper towels available.
Quats sanitizer measured 200 ppm

Bulk area:
High temp dishwasher final sanitizing rinse reached 72.2 deg C at plate surface.
Cleaning procedures in place for peanut butter machine.
Bulk bins are washed on a regular basis.
One sink with drain board available. However, there are some large bins that require to be washed manually.
Discussed with employee how large bins are washed. Sink may have to be upgraded to ensure proper washing and sanitizing of large bins are done.
