General cleaning has improved in kitchen and sushi bar, discussed with manager that this level of sanitation is expected as a minimum standard.
Observation for build up food debris and/or grease in the future may still result in enforcement action, so please inform all staffs importance of maintaining cleanliness.
Manager shall be creating a new cleaning schedule so he can verify whether areas and equipment are being properly cleaned as per schedule.
Garbage bag removed from behind reach in freezer.
New cooling log template in use where temperature and time are recorded for start and end cooling time.

Pending: replace cracked kitchen floor tile as grease can collect in cracks making it difficult to clean properly. Use material that is easily cleanable, durable, non absorbent as discussed.
