Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Meat slicer stored away on top of a chest freezer had raw meat residue remaining on the machine. Staff informed it was put away to be used again later today.
Correction: All equipment must be fully cleaned and sanitized after each use. If it is being put away to use later, it must be cleaned and sanitized between those uses.

Follow-up to inspection report #KLIU-D3AT8C:

> Required cleaning in previously mentioned areas has been completed: cook line, vent hood filters, dishwashing line, dry storage area, inside coolers and exterior surfaces, walls in the food prep/dishwashing area.
> Meat slicer that has been put away is in sanitary condition.
> Holes in the ceiling panels above the hot water tank have been temporarily sealed with tape. Operator is in the process of sourcing proper seals.
> Send photos to EHO once complete - no later than April 3, 2024.
> Ensure sanitizer spray bottles are clearly labelled. Operator labelled one in the kitchen at time of inspection.
> One server on site at time of inspection with valid foodsafe level 1 equivalent - valid until September 2025. On the days when this staff member is not present, there is staff in the kitchen with foodsafe.
> Pest control report from March 18, 2024 presented on follow-up - no activity noted. Old/broken snap traps have been removed and replaced.

Operator has 3 months to obtain a valid foodsafe level 1 certificate - must present upon the next routine inspection in 3 months time.
