Few broken glass pieces identified under bar cooler, please clean again.
No food being thawed at time of inspection, operator has been thawing lamb under cold running water since last inspection.
Tray of chicken thighs being cooled properly on cooling rack (single layer) at time of inspection.
Temperature and dishwasher charts are being recorded on reusable sheet. Discussed importance of keeping paper records in the event of complaints for investigation.
