Observation (CORRECTED DURING INSPECTION): Bean sprouts are kept in room temperature measuring at 18C
Corrective Action(s): Operator moved bean sprouts into cooler and made a smaller portion to use in the kitchen. Bean sprouts are considered a potentially hazardous food and must be stored below 4C on above 60C to prevent growth of pathogens

Observation (CORRECTED DURING INSPECTION): Cooked noodles in a tray has been sitting in room temperature measuring at 18.6C. Operator reports they have been prepared more than two hours ago
Corrective Action(s): Operator voluntarily discarded the noodles during our conversation. Cooked noodles are a potentially hazardous food and must be stored below 4C or above 60C to prevent growth of pathogens.

Observation (CORRECTED DURING INSPECTION): 1) Knives are stored in cracks and between equipment
2) In the prep cooler, there are containers sitting on top of food items
3) Thee is a bowl in the oil bucket. Operator reports he uses the bowl to scoop oil into fryer
Corrective Action(s): 1) Operator removed all knives and placed them in dishwasher. Knives must be kept in a sanitary manner
2) Operator relocated all containers into a cooler
3) Operator removed the bowl in oil pail
