Observation (CORRECTED DURING INSPECTION): Three sandwiches and two bottles of kombucha were observed within glass display cooler that measured 14 degrees C. Internal food temperature measured 15 degrees C. Bottles of kombucha were labeled "keep refrigerated." Items stored in cooler for greater than 2 hours.
Corrective Action(s): Above-noted food items discarded by operator. Ensure cold potentially hazardous foods are maintained at 4 degrees C or less to limit the growth of potential pathogens.

206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Nine beef rolls and four turkey rolls were stored in hot holding unit. Internal food temperature was measured at 32 degrees C. Items stored at this temperature for greater than 2 hours. Note: Hot holding unit also contained other foods, which were not discarded as they are not potentially hazardous and therefore do not require hot holding (plain and chocolate croissants).
Corrective Action(s): Improperly hot-held items noted above were discarded by operator. Ensure hot potentially hazardous foods are maintained at 60 degrees C or more to limit the growth of potential pathogens.

Observation (CORRECTED DURING INSPECTION): 1. No paper towels observed at two-compartment sink.
2. No liquid soap available at front designated hand sink.
Corrective Action(s): Hand washing stations were properly re-stocked. Ensure all hand washing stations are accessible and supplied with hot and cold running water, liquid soap, and paper towels at all times to facilitate proper hand washing.

Observation (CORRECTED DURING INSPECTION): Staff member was observed cleaning hands with water only.
Corrective Action(s): Staff member was directed to wash hands properly. Ensure all staff are properly washing hands with warm running water, liquid soap, and drying with paper towels. Ensure hands are washed at the frequency needed to prevent the potential contamination of food and food contact surfaces.

Observation (CORRECTED DURING INSPECTION): 1. Raw animal products such as eggs were stored above ready-to-eat items in upright cooler.
2. Croissants stored on counter were uncovered.
Corrective Action(s): 1. Items re-organized so that raw animal products are not stored above ready-to-eat foods. Ensure raw animal products are not stored above ready to eat foods to protect food below from potential contamination. Note: No signs of leakage/contamination.
2. Croissants covered. Ensure all foods are properly covered to protect from potential contamination.

Observation: Food debris and clutter observed in kitchen dry storage areas. This includes spilled flour, and small pieces of carpet.
Corrective Action(s): Ensure storage areas are thoroughly cleaned to remove all debris. Remove carpet, and any other items not required for business use. Food debris may potentially attract pest activity. Clutter may provide harbourage areas for pests, and may make it difficult to properly clean areas. Date to be corrected by: July 22, 2022.

Observation: Glass display cooler measured 14 degrees C.
Corrective Action(s): Have cooler serviced or replaced so that it is capable of maintaining food at 4 degrees C or less. Date to be corrected by: July 19, 2022.
Note: Cooler currently contains non-potentially hazardous beverages and food (e.g. bottled water, banana bread). Do not store any potentially hazardous foods in this cooler until it has been serviced and then re-inspected by the Environmental Health Officer.

Front 2-door under counter cooler at 1 degree C.
Front 1-door under counter cooler at 3 degrees C.
Front small domestic cooler at 3 degrees C.
Preparation cooler at 4 degrees C (lower compartment). NOTE: Upper compartment (food inserts) measured 6 degrees C. Lid was closed at time of inspection. Monitor to ensure temperature returns to 4 degrees C or less, and adjust temperature as needed.
Upright cooler at 2 degrees C.
Upright freezer at -13 degrees C.
Under counter freezer at -16 degrees C.
White upright freezer (storage) at -21 degrees C.
White chest freezer (storage) at -20 degrees C.
Hot holding soup and rice internal temperature at 60 degrees C or more.
Sanitizer available in two spray bottles. One bottle contained quats at 200 ppm; the other bottle contained bleach water sanitizer at 100 ppm chlorine. NOTE: Bottles properly labeled at time of inspection as labels were fading. Ensure chemicals are clearly labeled to identify contents and help prevent accidental mixing or misuse.
High temperature dishwasher measured 79 degrees C at the utensil surface during the final rinse (minimum required: 71 degrees C at utensil surface).
Dry storage area satisfactory. Food observed to be covered / sealed. Cans appear in good condition.
Washroom hand sinks adequately supplied.
No signs of pest activity observed at time of inspection.

1. Temperature logs are not up to date. Ensure temperature logs are maintained as per your food safety plan.
2. An enclosed bread storage cabinet is located above the dishwasher. Remove cabinet from this area as this space is required for ware washing purposes.
