Observation: 4 small silicone spatulas were worn out and had multiple cracks on the surface and ends. The loose hanging ends could break and fall in food during food handling which may result in potential physical contamination of food. Staff stated that these are the only spatulas they have for use, 3 spatulas were discarded by staff during inspection and last one will be discarded after receiving the new spatulas.
Corrective Action(s): Please ensure that all equipment/utensils/food contact surfaces are maintained in good working order. Please notify the district EHO by email or phone once the new spatulas are in place.

Observation: REPEATED VIOLATION
2 staff on duty at the time of inspection. They stated that they are enrolled in online FOODSAFE Level 1 course and in process of completing it by end of next week.
Corrective Action(s): Please ensure that in operator's absence, at least one staff on duty has valid FOODSAFE Level 1 or equivalent. Submit staff's FS level 1 certificates by March 15.
**Failure to do so may result in enforcement action including issuance of correction/closure ordere, violation tickets and/or fine.

Comments

Routine inspection conducted.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Front beverage cooler at 1C
- Front cold table at 4.5C
- Front hot holding at 60C or above
- Undercounter cold holding at 0C
- Back stand up freezer at -9C
- Walk in cooler at 3C
- Temperature logs were maintained and found up-to-date.
If the temperature of refrigeration unit or hot holding does not meet the health requirement, a follow up action must be taken as per the approved Food Safety Plan.

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers. Good.
- All clean utensils were properly stored and organized on the shelving units. Good
- Storage area was well-organized.
Do not double stack the hot holding units as it would result in inadequate heat reaching the food hot held in the unit resulting in food stored below 60C.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer pails available and the concentration of QUATS noted at 200ppm.
- 3 compartment dishwashing sink available. QUATS dispenser mounted on the wall and mixed with water as per manufacturer's instructions to carry out sanitizing step.
- General sanitation of the facility was satisfactory.
- No signs of pest activity observed during inspection.
Mechanical dishwasher not in use. Single use containers used for dine-in & take out services.

Administrative:
- Operating permit was posted in a conspicuous location.
