Food Safety training is up to date ( they review all food safety certificates annually by the Head office ) Daily temp logs are up to date Hydrogen peroxide testing and using instruction is posted/test strips are available for all approved sanitizers Discussed the flies protection and prevention ( such as the receiving door alarm installed, fly traps installed at the back of the store, etc ) Discussed the ice machine cleaning ( to be scheduled daily and recorded as part of your daily cleaning schedule). The full cleaning of the ice machine is done once / month by maintenance person.
