A follow-up inspection was completed, the following observations were made: - The floor, cupboards, walls, surfaces, racks and equipment have been cleaned. Good job. - Bleach sanitizing solution being used in kitchen and on food processing surfaces. [Cl2] was 200ppm. - All rodent droppings have been cleaned up and the areas sanitized. ACTIONS TO COMPLETE: 1) Ensure a new sanitizing solution in spray bottles is made every 2nd day. Only add 1/2 tsp of bleach to the spray bottle. 2) When manually washing and sanitizing large items in the 3-comp sink, add 2 Tbsp of bleach to 8L of water (in the 3rd sink). 3) There is accumulated dust on the upper wall above the exhaust canopy, on the exhaust canopy flume, on the exhaust filters, and on the ceiling air diffusers. The dust could fall into food. Wash and clean these surfaces to remove the dust. These areas must be cleaned regularly (at least twice a month or more).
