Observation (CORRECTED DURING INSPECTION): No soap available at 3 compartment sink in back area. This issue was noted on the previous report. Paper towel in dispenser, hot and cold running water available. Operator went and purchased hand soap in pump style dispenser at time of inspection.
Corrective Action(s): Ensure 3 compartment sink is fully equipped with soap, paper towel, hot and cold running water at all times so staff can properly wash their hands between handling dirty and clean food equipment. Fix/reinstall wall mounted soap dispenser before next routine inspection.

Observation: Noted food debris and several empty crouton bags on the floor in the front service area.

Comments

Hand wash station in front service area and back food preparation area were fully equipped with soap, paper towel, hot and cold running water.
All coolers 4C or less (walk in, under counter, prep cooler..etc) Note: Inserts just filled for lunch rush. Keep out small portions to ensure turn over rate of 2 hrs or less if unable to maintain 4C or less. Place lids on inserts to help maintain temperature.
Walk in freezer -17C and undercounter freezer - 14C
No obvious sign of pest activity noted at time of inspection.
Ice machine not in use at time of inspection.
Quat sanitizer at source, in sanitizing compartment of ware washing sink and in containers with cloths submerged 200ppm.
Manual ware washing procedures reviewed at time of inspection – no concerns.
All stored foods appeared protected (ie. stored off the ground, covered, lights in food prep areas had covers..etc)
