Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: The high temperature dishwasher rinse temperature was 68 degC after 4 tries. This does not meet the minimum requirement.
Correction: The rinse temperature must be at least 71 degC at the plate level. Get the dishwasher fixed. In the mean time, once the dishes have been washed in the dishwasher, sanitize them by soaking in the Quats sanitizer for 2 minutes in the 3-compartment sink before air drying.

On Follow-Up:

-Dishwasher has been fixed. Rinse temperature is at 71 degC at plate level. You can use a min/max high temperature waterproof thermometer to measure the internal temperature.
