- Premises and equipment maintained in sanitary condition. Some attention needed under dishwasher as miscellaneous debris/grime present (Addressed at the time of the inspection). - Coolers and freezers were operating at acceptable temperatures: - Walk-in cooler (left) 3C - Walk-in cooler (right) 3C - Salad line/drawer cooler 4C - Under grill drawer cooler 2-3C - Single door True reach in cooler 3C - Single door Frigidaire cooler 3C - Sliding door cooler (bar) 1C - Walk-in freezer -18C - Undercounter freezer -14C - Food in storage covered/wrapped to prevent contamination. - Raw meat stored away from ready to eat items - Hot holding of potentially hazardous foods was at acceptable temperatures (60C or higher) - Soup 68C - Cooked rice 67C - High temperature dishwasher operational. Final rinse measured 75.7C at dish surface - Bar glasswashers (front and back) operational. 15ppm Iodine detected in rinse. Test kit present to monitor. Iodine residual should be checked daily. - Quats sanitizer present in kitchen for use on food contact surfaces. Concentration measured 200ppm. - No signs of pest activity noted at the time of the inspection. Pest control contract in place with monthly service. - Foodsafe requirements met.
