Observation (CORRECTED DURING INSPECTION): Mostly covered container of squid defrosting under cold running water in mop sink at time of inspection. No evidence of contamination noted on the squid at time of inspection.
Corrective Action(s): Container of squid was moved to the walk-in cooler. Do not store any food items inside the mop sink - the mop sink is meant STRICTLY for disposal of waste water from the mop bucket.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Small undercounter cooler still at 9C at time of inspection. This issue has not been resolved yet from the previous inspection. Cooler only stores produce at the moment.
Corrective Action(s): Replace the undercounter cooler so that it can maintain a temperature of 4C or less. Obtain an accurate thermometer for the cooler.

- Ventilation slats and area under cook line now in sanitary condition. Thank you for your co-operation. A follow-up inspection will be conducted to ensure that the cooler has been adjusted or replaced
