Observation: 1. Heavy build up of grease observed on range hood filters. Range hood is past professional cleaning period (Dec 2022).
2. Black build up and yellow-orange discolouration observed in ice machine interior.
3. *Repeat* (Since Oct 6, 2022) Build up of food debris around and in between cooking units of cook line.
Corrective Action(s): 1. Staff stated unit cleaned every 2 weeks. Based on build up, cleaning every week is recommended to prevent build up of grease.
