Observation: 1) Container of sourdough mix stored next to chemicals near warewashing sink. Note: Lid was in place on bucket; however, it is still unacceptable for food to be stored adjacent to chemicals.
2) Perogies were stored in garbage bags in walk-in freezer. Garbage bags are not suitable for food storage as they may contain chemicals which may leach into food.
Corrective Action(s): 1) Do not store food within designated chemical storage area. Store all food within food preparation or storage areas within premises. Corrected at time of inspection.
2) Store all food within food grade containers or packaging. Operator reported he has food grade bags for this purpose; however, had temporarily run out as supplier was unable to supply. To be corrected by: 07-June-2022

Comments

- Production facility for baked products and perogies with warehouse and retail storefront/showroom. Products are supplied to food premises within BC.
- Handwashing sinks were supplied with hot and cold running water, liquid soap and paper towel
- Warewashing sinks were supplied with hot and cold running water. Signs posted at warewashing sink with manual dishwashing steps. Bleach present for sanitizing step.
- Bleach solution present in spray bottle for sanitizing food contact
- Retail sliding door 4C. Temperature was initially 7C; however, decreased during inspection. Continue to monitor to ensure temperature is maintained. Slight gap noted where door closes on left side of unit. Operator to determine if new gasket/seal is noted.
- Retail freezer -18C
- Walk-in freezer -15C
- Walk-in freezer -14C
- Walk-in cooler 1C
- Cooler and freezer temperatures are checked and recorded daily (in the morning). Records present and up to date.
- Warehouse maintained with food items stored off of the floor on pallets and shelving.
- No signs of pest infestation noted at time of inspection. Pest control contract in place with service every 2 weeks. Most recent report viewed. Report did not indicate any pest activity.
Ensure all bags of dry goods are tightly sealed once production is complete for the day and ensure any spilled products are cleaned to prevent pest attraction.
Operator reports routine cleaning schedule in place for floors (daily) and shelving (every 2 weeks or more often if needed).
