Discussed cooked chickens - Chickens are cooked and temperature is logged, then packaged and placed into holding unit for no more than 3 hours. During this time. chickens are routinely probed for temperature to ensure greater than or equal to 60C internal temperature. After 3 hours (batches are tracked on a log), the chickens are pulled out of the holding case and cooled in blast freezer.
