Observation (CORRECTED DURING INSPECTION): Large amount of food sitting out in large bus bins cooling at room temperature. (probed and internal temp was 35C and 36C) Bins are filled more than half full and no times written on the bin as per the correction order. Correction order issued and food discarded
Corrective Action(s): Bus bins must only be half full, and time the food starts cooling must be written on the bin. Food must only be out at room temperature for 2 hours, Maximum

Observation (CORRECTED DURING INSPECTION): 6 large containers sitting out at room temperature, including rice, noodes, cooked chicken

Observation (CORRECTED DURING INSPECTION): 1) no bleach spray bottle or bucket made up to sanitize surfaces
2) discussed proper dishwashing with staff and staff did not know the proper steps, even though their is a poster above the sink
Corrective Action(s): 1) Bleach spray bottle or bucket must always be available to sanitize food prep surfaces
2) Proper dishwashing includes: washing with soap and water in the first sink, rinsing with water in the second sink and soaking in water and bleach at 100ppm in the third sink
